  • 1 pound salmon fillets (or your preferred fish)
  • â…“ cup olive oil
  • 1 red bell pepper (sliced)
  • 1 serrano pepper (sliced)
  • ½ cup chopped cilantro
  • 2 carrots (sliced)
  • 6 garlic cloves (halved)
  • 1 tablespoon tomato paste
  • sweet paprika
  • hot paprika
  • coarse salt
  • cumin
  • turmeric
  • ¾ to 1 cup water

Instructions

  1. Heat olive oil in a large sauté pan over medium heat. Sauté red bell pepper, serrano pepper, carrots, and garlic for 2-3 minutes.
  2. Stir in sweet paprika, coarse salt, cumin, turmeric, and tomato paste; cook for an additional 2-3 minutes.
  3. Add half of the cilantro and about ¾ cup of water; cover and cook for 12-15 minutes until veggies are tender.
  4. Lightly season the salmon fillets with salt and place them in the pan. Spoon sauce over the fish, cover, and simmer on low for 20-25 minutes.
  5. Garnish with remaining cilantro and serve with lemon wedges.
