  • 200ml heavy cream
  • 80g mascarpone
  • 120ml coconut milk
  • 120g powdered sugar (divided)
  • Vegan gelatin sheets (4g)
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • Sea salt
  • 3 egg yolks
  • Gooey cocoa spread

Instructions

  1. Start by whipping heavy cream and mascarpone together in a chilled bowl, gradually adding powdered sugar until soft peaks form. Chill.
  2. Soak vegan gelatin sheets in cold water, then heat coconut milk, dissolve the gelatin in it, and fold into the whipped mixture.
  3. Pour mousse into hemisphere molds, adding chocolate spread halfway through, cover, and freeze for at least 6 hours.
  4. Mix shortbread ingredients until dough forms; refrigerate for 30 minutes, roll out, cut into circles, and bake at 180°C for about 10 minutes.
  5. Once cooled, unmold the mousse domes and place them on shortbread bases; allow to thaw before serving.
