  • 2 Tbsp coconut oil
  • 1 large onion
  • 4 garlic cloves
  • 1 Tbsp fresh ginger
  • 2 Tbsp red curry paste
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • 1 Tbsp tomato paste
  • 2 Tbsp brown sugar or honey
