  • 1/4 cup dark cocoa powder

  • 2 tablespoons instant espresso powder
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1/4 teaspoon baking powder
  • 3/4 cup all purpose flour
  • 3 tablespoons heavy whipping cream
  • 1 1/2 teaspoons instant coffee granules
  • 1/4 cup unsalted butter, softened
  • 1/8 teaspoon salt
  • 1 3/4 cup powdered sugar
  • 1/2 cup dark chocolate chips
  • 2 tablespoons heavy whipping cream

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C) and line an 8×8 inch baking pan with foil.
  2. In a mixing bowl, whisk together melted butter and dark cocoa powder until smooth.
  3. In another bowl, beat together granulated sugar, eggs, instant espresso powder, and vanilla extract until light and fluffy.
  4. Combine the cocoa mixture with the egg mixture and mix until combined.
  5. In a separate bowl, stir together table salt, baking powder, and all-purpose flour.
  6. Gradually add this dry mixture into the brownie batter while stirring gently until just combined.
  7. Spread the brownie batter evenly in your prepared pan and bake for 25–28 minutes or until a toothpick inserted in the center comes out slightly sticky. Remove from oven and allow to cool completely.
  8. In a small bowl, stir together heavy whipping cream and instant coffee granules until dissolved.
  9. In another mixing bowl, beat softened butter with salt until creamy, then gradually add powdered sugar followed by the coffee cream while mixing until fully incorporated.
  10. Beat on high speed for about one minute or until light and fluffy. Spread frosting over cooled brownies.
  11. In a microwave-safe bowl, combine dark chocolate chips with heavy cream. Heat in intervals of 30 seconds, stirring in between until melted and smooth.
  12. Spread the melted chocolate topping over the frosted brownies. Allow it to set before cutting into squares.
