  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter (melted and cooled)
  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • 1 tsp pure vanilla extract
  • 2 large eggs (room temperature)
  • 1 ½ cups semi-sweet chocolate chips
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 tsp salt
  • 1 tsp ground cinnamon

Instructions

  1. Blend instant coffee into a powder using a food processor.
  2. In a medium bowl, sift together flour, blended coffee, baking soda, baking powder, salt, and cinnamon.
  3. In a large bowl, combine melted butter, brown sugar, granulated sugar, vanilla extract, and eggs; mix well until combined.
  4. Gradually add dry ingredients to the wet mixture using a rubber spatula until just combined. Fold in chocolate chips.
  5. Preheat oven to 350°F (175°C) and line cookie sheets with parchment paper.
  6. Scoop dough onto prepared sheets using a cookie scoop; top each ball with extra chocolate chips.
