  • 1 carrot, peeled and diced
  • 1/2 yellow onion, diced
  • 1 small russet potato, peeled and diced
  • 1/2 red pepper, diced
  • 1 (14 oz) can of tomatoes, drained and chopped
  • 5 cups water
  • 2 cups chicken broth
  • 3 tbsp olive oil
  • 2 cups shredded chicken
  • 2 cups cooked ditali pasta

Instructions

  1. Prepare your vegetables by washing and chopping them into bite-sized pieces.
  2. In a large pot over medium heat, warm the olive oil. Once heated, sauté the chopped celery, carrot, onion, potato, and red pepper until softened.
  3. Stir in minced garlic, parsley, oregano, and red pepper flakes; cook for about 2 minutes until fragrant.
  4. Add the drained tomatoes, water, and chicken broth to the pot. Mix well.
  5. Bring the mixture to a boil then reduce heat to low. Simmer uncovered for about 20 minutes.
  6. Stir in shredded chicken and cooked ditali pasta; cook for an additional 5 minutes until everything is heated through.
