  • 3/4 cup Small Pasta (such as ditalini)
  • 2 medium Carrots, finely chopped
  • 2 Celery Stalks, finely chopped

  • 3 cloves Garlic, minced
  • 1 can (14.5 oz) Diced Tomatoes, undrained
  • 4 cups Vegetable or Chicken Broth
  • 1 sprig Fresh Rosemary
  • 2 tablespoons Fresh Parsley, chopped
  • 2 tablespoons Olive Oil
  • Salt and Black Pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onions, carrots, and celery finely. Mince the garlic and rinse the beans if canned.
  2. In a large pot over medium heat, add olive oil and sauté the onions, carrots, celery, and garlic for about 5-7 minutes until softened.
  3. Stir in the diced tomatoes along with their juice and pour in the broth. Bring to a gentle simmer.
  4. Add the cannellini beans, rosemary sprig, and pasta to the pot. Simmer for an additional 8-10 minutes until pasta is tender.
  5. Remove the rosemary sprig, adjust seasoning with salt and pepper as needed, then drizzle with olive oil before serving.
