  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar (for filling)
  • ¼ cup granulated sugar + 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan and line with parchment paper.
  2. In a bowl, mash the bananas. Mix in melted butter, brown sugar, eggs, and vanilla until smooth.
  3. In another bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Gradually add dry ingredients to the wet mixture; stir until just combined.
  5. In a separate bowl, beat cream cheese with granulated sugar and egg until smooth.
  6. Layer half of the banana batter into the prepared pan, sprinkle half of the cinnamon-sugar mixture on top, spread the cream cheese filling over it, then add remaining batter and top with the rest of the cinnamon-sugar mixture.
  7. Bake for 50–60 minutes or until a toothpick comes out clean. Cool before slicing.
