  • 300g rotini pasta
  • 2 chicken breasts, diced
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Salt & pepper to taste

Instructions

  1. Cook rotini pasta according to package directions. Add broccoli florets during the last 3 minutes of cooking. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat; add diced chicken and cook until golden brown (5-7 minutes).
  3. Stir in minced garlic for about 1 minute until fragrant.
  4. Add heavy cream, chicken broth, Parmesan cheese, salt, and pepper to the skillet; simmer for 3-5 minutes until thickened.
  5. Combine drained pasta and broccoli with the sauce; toss well.
  6. Serve garnished with extra Parmesan cheese and fresh parsley.
