  • 1 lb boneless, skinless chicken breast or thighs
  • 4 slices turkey bacon, chopped
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 tablespoon flour
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 1 tablespoon Dijon mustard
  • Salt and black pepper to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 2 cups cooked white rice

Instructions

  1. In a large skillet over medium heat, cook turkey bacon until crispy (5–7 minutes). Remove and set aside.
  2. In the same skillet, heat olive oil. Add sliced chicken, season with salt and pepper, and cook until golden brown (6–8 minutes). Remove and set aside.
  3. Sauté chopped onion in the skillet until translucent; add minced garlic and smoked paprika, cooking for an additional minute.
  4. Sprinkle flour over onions and stir well; gradually pour in chicken broth while stirring. Bring to a simmer.
  5. Stir in sour cream and Dijon mustard until smooth; return cooked chicken and Turkey bacon to the skillet and simmer for another 5 minutes.
  6. Serve over cooked rice garnished with fresh parsley.
