  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14 oz) can full-fat coconut milk
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/2 cup beef broth
  • 1 tablespoon tomato paste
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • 2 cups all-purpose flour
  • 1/2 cup plain yogurt
  • 1/4 cup warm water
  • 1 teaspoon sugar
  • 1/2 teaspoon baking powder

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté chopped onion until translucent. Add minced garlic and grated ginger; cook until fragrant.
  2. Add cubed beef stew meat to the pot. Brown on all sides for 5-7 minutes; season with salt and pepper.
  3. Stir in curry powder, ground cumin, turmeric, and cayenne pepper (if using) to coat the beef.
  4. Pour in coconut milk, beef broth, tomato paste, and chickpeas; mix well and bring to a simmer.
  5. Reduce heat to low; let simmer uncovered for about 30 minutes until beef is tender.
  6. For garlic naan: In a bowl, combine flour, yogurt, warm water, sugar, and baking powder; knead into a soft dough.
  7. Roll out dough into flat circles; cook each naan in a hot skillet for 2-3 minutes per side until golden brown.
