  • 2 medium Potatoes
  • 1 tbsp Smoked Paprika
  • 1 tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 1 cup Heavy Cream (or coconut milk)
  • 1 cup Shredded Cheddar Cheese

Instructions

  1. Prepare ingredients by chopping the onion, mincing garlic, and dicing potatoes.
  2. In a large pot over medium heat, brown the ground beef for about 5-7 minutes.
  3. Add onions and garlic; sauté until soft (about 3-4 minutes).
  4. Stir in beef broth, diced tomatoes, corn, black beans, and potatoes.
  5. Season with smoked paprika, chili powder, cumin, salt, and black pepper; mix well.
  6. Bring to a gentle boil then reduce heat and let simmer uncovered for about 20 minutes until potatoes are tender.
  7. Stir in heavy cream (or coconut milk) and heat through for another 5 minutes.
