  • 2 cups shredded rotisserie chicken
  • 1 cup orzo pasta, uncooked
  • 3/4 cup light cream
  • 1/2 cup fresh grated Parmesan cheese
  • 1/3 cup fresh squeezed lemon juice
  • 1/3 cup white apple vinegar
  • 4 cloves garlic, grated
  • 1 shallot, finely diced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon lemon zest
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 3 oz jar of capers, drained
  • 1 tablespoon olive oil

Instructions

  1. Start by frying the capers in olive oil in a small pan until crispy; set aside.
  2. In a large pot, melt butter and sauté shallots and garlic until softened.
  3. Stir in flour, then add chicken broth and apple vinegar; season and bring to a boil.
