  • 4 boneless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup long-grain rice
  • 2 cups water or broth
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water until clear. Combine it with water/broth and salt in a saucepan, boil, then simmer on low for 18-20 minutes. Fluff with a fork and stir in herbs.
  2. Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper, cooking each side for 6-7 minutes until golden brown. Remove from skillet.
  3. In the same skillet, sauté minced garlic for 30 seconds, add chicken broth, simmering while scraping the skillet's bottom. Stir in heavy cream and thicken slightly before adding back the chicken.
  4. Serve herb rice on plates topped with chicken and sauce.
