Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Steam washed and chopped cauliflower, broccoli, and carrots for 5–7 minutes until just tender.
  3. In a saucepan over medium heat, melt butter. Stir in flour to create a roux; cook for about 1–2 minutes until slightly golden.
  4. Gradually whisk in warm milk until the sauce thickens (3–5 minutes). Add garlic powder, nutmeg, salt, pepper, cheddar, and Parmesan cheese until melted.
  5. Combine steamed vegetables with the cheese sauce in a large bowl until coated.
  6. Pour the mixture into the prepared baking dish. If desired, sprinkle breadcrumbs on top.
  7. Bake for 20–25 minutes until bubbly and golden; broil on high for an additional 2–3 minutes if you prefer a crispier top.
