  • 4 organic lemons (peel only)
  • 1 liter milk
  • 600 grams granulated sugar
  • 1 vanilla bean
  • 500 mL fruit juice or broth (as an alcohol substitute)

Instructions

  1. Wash lemons thoroughly. Use a vegetable peeler to remove the yellow peel while avoiding the bitter white pith.
  2. Place lemon peels in a mason jar and add fruit juice or broth; seal tightly and let steep for 6 days in a cool dark place, swirling daily.
  3. After steeping, strain the mixture through cheesecloth into a clean bottle.
  4. In a saucepan over medium-low heat, warm milk, sugar, and split vanilla bean until sugar dissolves completely; let cool.
  5. Combine cooled milk mixture with strained lemon infusion, then refrigerate or freeze before serving.
