  • 1 cup all-purpose flour
  • 1 1/2 tbsp granulated sugar
  • 1/8 tsp salt
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 3/4 cup whole milk
  • 1/2 cup water
  • 3 tbsp unsalted butter
  • 1/2 cup castor sugar (for sauce)
  • 3/4 cup orange juice
  • Thinly sliced orange peel
  • 1/3 cup fruit juice (as an alternative to liqueur)

Instructions

  1. In a mixing bowl, combine flour, sugar, and salt. Add eggs, vanilla extract, milk, and water; whisk until smooth. Let the batter rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and melt some butter. Pour about 1/4 cup of batter into the skillet, tilting it to coat evenly. Cook for 1-2 minutes until golden brown; flip and cook for another minute. Repeat until all batter is used.
  3. For the orange sauce, melt castor sugar and butter in another pan over medium heat. Stir in orange peel and juice; cook until slightly thickened.
  4. Fold each crepe into quarters and place them in the orange sauce briefly before serving warm with additional sauce drizzled on top.
