  • 1/4 cup vegetable oil
  • 16 corn tortillas (6-inch)
  • 2 cups refried beans, warmed (16-ounce can)
  • 1 teaspoon vegetable oil
  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 2 cups enchilada sauce (or use taco sauce)
  • 8 ounces cheddar cheese, shredded
  • Diced tomato
  • Sliced black olives
  • Green onion
  • Hot sauce
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a frying pan over medium heat.
  2. Add the tortillas, 1-2 at a time, frying each side for 2-3 minutes until golden brown and crisp.
  3. Drain excess oil on paper towels and lightly season with salt.
  4. Preheat your oven to 350°F (175°C).
  5. In another pan, heat 1 tablespoon of vegetable oil over medium heat.
  6. Add the ground beef and cook for 6-7 minutes until browned.
  7. Stir in taco seasoning and 1/4 cup of water; simmer for 10 minutes to let flavors meld.
  8. On a baking sheet, arrange 8 crispy tortilla shells.
  9. Top each shell with a layer of enchilada sauce, followed by refried beans and seasoned beef.
  10. Place another tortilla on top of each assembly; add more enchilada sauce and shredded cheese.
  11. Transfer the baking sheet to the oven and bake for about 10 minutes or until cheese is melted and bubbly.
  12. Once out of the oven, top your pizzas with diced tomatoes, black olives, green onions, and hot sauce as desired.
