- 1.5 – 2 lbs fresh green beans (trimmed and cut into 2–3" pieces)
- 1.5 lbs small potatoes (halved)
- 1 large onion (diced)
- 1 lb turkey sausage (sliced into rounds)
- 1/2 cup butter
- 1 tablespoon Cajun seasoning (divided)
- 1/2 teaspoon pepper
- Place halved potatoes in a large crock pot. Season with pepper and half of the Cajun seasoning.
- Add the stick of butter on top of the seasoned potatoes.
- Layer trimmed green beans and diced onion over the potatoes, then sprinkle with the remaining Cajun seasoning.
- Top with sliced turkey sausage.
- Cover and cook on HIGH for 4 hours or LOW for 6 hours, stirring gently once each hour.
- Taste before serving and adjust seasoning if necessary.
