  • 2 (14.5 oz) cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup chopped yellow onion
  • 2 cloves garlic, chopped

  • 1½ tsp dried oregano
  • ¾ tsp dried thyme
  • 1 tbsp ground cumin
  • Lemon wedges

  • Greek yogurt

  • Fresh dill

Instructions

  1. Chop the onion and garlic; rinse the white beans.
  2. Place chicken breasts, white beans, chicken broth, chopped onion, chopped garlic, salt, oregano, thyme, and cumin in the crockpot.
  3. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until chicken is tender.
  4. Shred the chicken using two forks and return it to the pot; stir to combine.
  5. Serve warm with desired toppings such as lemon wedges, avocado slices, or Greek yogurt.
