  • 1 medium yellow onion (diced)
  • 2 garlic cloves (minced)
  • 3 large gold potatoes (peeled and diced)
  • 30 oz pinto beans (rinsed and drained)
  • 15 oz can whole kernel corn (drained)
  • 15 oz can diced tomatoes (undrained)
  • 14 oz can Rotel (undrained)
  • 10 oz bag frozen mixed vegetables
  • 2 cups beef broth
  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2 teaspoons freshly chopped parsley (for garnish)

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef until fully cooked. Add the onions and garlic; sauté for an additional two minutes before removing from heat.
  2. Transfer the beef mixture to your slow cooker. Add the diced potatoes, pinto beans, corn, diced tomatoes, Rotel, frozen mixed vegetables, beef broth, brown sugar, smoked paprika, onion powder, salt, and pepper. Stir to combine.
  3. Cover and cook on high for 3–4 hours or low for 6–8 hours until vegetables are tender.
  4. Serve hot, garnished with fresh parsley.
