  • 2 tbsp Olive Oil
  • 3.5 cups Vegetable Broth
  • 1 medium Jalapeño Pepper
  • 1 cup Corn
  • 3/4 cup Dried Red Lentils
  • 15 ounces Tomato Sauce
  • 1 medium Red or Green Bell Pepper
  • 3/4 cup Salsa
  • 15 ounces Black Beans
  • 15 ounces Red Beans
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1/2 tsp Cumin
  • 1/4 tsp Cayenne Pepper
  • 1/2 cup Light Cream Cheese
  • Salt
  • Pepper
  • Crushed Tortilla Chips
  • Sliced Avocado
  • Sour Cream
  • Diced Jalapeños
  • Chopped Red Onion
  • Shredded Cheddar
  • Fresh Cilantro

Instructions

  1. Prep all vegetables by chopping onions, bell peppers, and jalapeños.
  2. In a skillet over medium heat, add olive oil and sauté onions until translucent. Stir in jalapeños and bell peppers until slightly softened.
  3. In the crockpot, combine sautéed veggies with vegetable broth, lentils, corn, tomato sauce, black beans, red beans, spices, salt, and pepper.
  4. Cover and cook on low for 8 hours or high for 4 hours until lentils are tender.
  5. About 30 minutes before serving, stir in light cream cheese until melted.
  6. Serve hot with your choice of toppings such as crushed tortilla chips, avocado slices, sour cream, diced jalapeños, chopped onions, shredded cheddar cheese, and fresh cilantro.
