  • 1 large onion (chopped)
  • 2 carrots (sliced)
  • 3 cloves garlic (grated)
  • 1 teaspoon ginger (grated)
  • 5 cups vegetable broth
  • 1 can (15 ounces) crushed tomatoes
  • 1 cup dried lentils (green or brown)
  • 1 pound potatoes (cubed)
  • 5 ounces kale (or spinach, chopped)
  • 2 teaspoons curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • ¼ teaspoon red pepper flakes (more or less to taste)
  • 1 teaspoon salt (or more to taste)
  • ⅛ teaspoon black pepper
  • Lime wedges for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and carrots; sauté for about 3 minutes until softened.
  2. Stir in garlic, ginger, curry powder, turmeric, cumin, and red pepper flakes; sauté for another minute.
  3. Pour in vegetable broth and add crushed tomatoes, lentils, potatoes, kale, salt, and pepper. Bring to a gentle simmer.
  4. Cook for about 30 minutes until lentils are tender.
  5. Adjust seasoning if necessary and serve with lime wedges.
