  • 4 cups water
  • 5 cups white sugar
  • 1 (3 oz) pouch liquid pectin
  • 5 half pint canning jars with lids and rings

  1. Prepare the ginger by cutting it in half; cube one half and shred the other.
  2. Simmer the prepared ginger in water for 1 hour and 15 minutes. Reserve ½ cup of the liquid after draining.
  3. Chill the cooked ginger in the fridge for about 4 hours.
  4. In a large pot, combine chilled ginger, reserved water, and sugar; bring to a boil for 1 minute.
  5. Stir in liquid pectin and simmer for an additional 7 minutes, skimming foam as needed.
  6. Sterilize canning jars in boiling water.
  7. Fill jars with hot marmalade, leaving about ¼ inch of space at the top, then seal tightly.
  8. Process filled jars in a boiling water bath for about 15 minutes to ensure proper sealing.
  9. Allow jars to cool completely before storing them in a cool, dark place.
