  • 2 cups cooked and shredded chicken
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 flour tortillas
  • 1 can (10 oz) red enchilada sauce
  • 2 cups shredded Monterey Jack cheese
  • Chopped cilantro for garnish
  • Sour cream for serving

Instructions

  1. Prepare the chicken by boiling or baking until fully cooked, then shred.
  2. In a skillet over medium heat, sauté chopped onion and minced garlic in vegetable oil until soft.
  3. Combine shredded chicken with onions, garlic, cumin, chili powder, salt, and pepper; cook until heated through.
  4. Pour some enchilada sauce into a baking dish. Fill each tortilla with the chicken mixture and shredded cheese before rolling them up snugly.
  5. Place rolled tortillas seam-side down in the baking dish, pour remaining sauce on top, sprinkle with cheese, cover with foil, and bake at 375°F (190°C) for 20-25 minutes. Remove foil and bake an additional 5-10 minutes until bubbly.
