- 1 cup cooked quinoa
- 1 cup grated zucchini
- 1 cup grated carrot
- 1 can chickpeas (lightly mashed)
- 1 cup bell pepper (chopped)
- 2 tablespoons soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 cup breadcrumbs
- 1 egg (or flax egg)
- Olive oil (for baking)
- Salt and pepper to taste
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine cooked quinoa, grated zucchini, grated carrot, mashed chickpeas, bell pepper, and green onions.
- Add soy sauce, garlic powder, onion powder, ground cumin, smoked paprika, salt, pepper, breadcrumbs, and egg (or flax egg). Mix until well combined.
- Form mixture into equal-sized patties (about ¼ cup each) and place on the prepared baking sheet.
