  • 1 cup cooked quinoa
  • 1 cup grated zucchini
  • 1 cup grated carrot
  • 1 can chickpeas (lightly mashed)
  • 1 cup bell pepper (chopped)
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 cup breadcrumbs
  • 1 egg (or flax egg)
  • Olive oil (for baking)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine cooked quinoa, grated zucchini, grated carrot, mashed chickpeas, bell pepper, and green onions.
  3. Add soy sauce, garlic powder, onion powder, ground cumin, smoked paprika, salt, pepper, breadcrumbs, and egg (or flax egg). Mix until well combined.
  4. Form mixture into equal-sized patties (about ¼ cup each) and place on the prepared baking sheet.
  5. Brush tops with olive oil or cooking spray and bake for 20 minutes or until golden brown, flipping halfway through.
