  • 4 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tsp salt
  • 1 tbsp active dry yeast
  • 1 cup whole milk (warm)
  • 1 large egg (room temperature)
  • 1 cup + 2 tbsp cold unsalted butter (for laminating)
  • 7 oz cream cheese (softened)
  • 1/4 cup granulated sugar (for filling)
  • Zest of 1 lemon (optional)
  • 1 cup powdered sugar (for glaze)

Instructions

  1. In a large mixing bowl, combine flour, sugar, and salt. In another bowl, mix warm milk with yeast and let it sit until foamy.
  2. Add the egg and yeast mixture to the dry ingredients and mix until a dough forms. Knead for about 6–8 minutes until smooth; then cover and chill for 30 minutes.
  3. Prepare a butter layer by pounding cold butter into an 8-inch square between parchment papers; chill until firm.
  4. Roll out the dough to a 16-inch square, place the butter in the center, fold corners over to seal, then roll into an 8×24 inch rectangle. Fold like a letter and chill for another 30 minutes; repeat two more times.
  5. Roll final dough to about 1/4 inch thick, cut into squares, fill with cream cheese mixture, shape as desired, and let rise for one hour while preheating the oven to 390°F.
  6. Bake for about 15–20 minutes until golden brown.
