  • 2 large eggs
  • 3/4 cup olive oil
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups kataifi pastry (separated into strands)
  • 2 tablespoons unsalted butter (for toasting kataifi)
  • 3/4 cup pistachio butter (homemade or store-bought)
  • 1 cup white chocolate chips (or chopped white chocolate)
  • 2 teaspoons neutral oil (optional, for extra creaminess)
  • 1 1/2 cups dark chocolate (chopped)
  • 3/4 cup heavy cream
  • 1 tablespoon honey

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 8-inch round cake pans.
  2. In one bowl, whisk together the flour, cocoa powder, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, combine the eggs, olive oil, milk, and vanilla.
  4. Pour the wet mixture into the dry ingredients and mix gently until combined.
  5. Divide the batter between the prepared pans and bake for 25–30 minutes until a toothpick comes out clean.
  6. While cooling, toast kataifi pastry in butter until golden brown.
  7. Melt white chocolate and mix with pistachio butter; fold in toasted kataifi.
  8. Prepare ganache by heating cream with honey; pour over chopped dark chocolate and mix until smooth.
  9. Assemble layers with pistachio filling and top with whipped ganache.
