  • 1 cup (125g) all-purpose flour
  • 1/4 cup (25g) cocoa powder
  • 1/4 tsp salt
  • 1/2 cup (115g) unsalted butter, softened
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup (120g) chow mein noodles
  • 1 1/2 cups (250g) milk chocolate chips
  • 1 tbsp coconut oil or vegetable shortening (optional)
  • 1/2 cup (100g) milk or dark chocolate chips
  • 1 tsp coconut oil or butter (optional)
  • Pastel candy eggs (2–4 per cookie, depending on size)
  • Optional: Colorful sprinkles or nonpareils

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the flour, cocoa powder, and salt.
  3. In a larger bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy.
  4. Add in vanilla extract and egg; mix until smooth.
  5. Gradually add the dry mixture to the wet ingredients until a soft dough forms.
  6. Scoop about 1 tablespoon of dough; flatten each into a 2-inch disk.
  7. Place on the prepared baking sheet and bake for 8–10 minutes until edges are set.
  8. Allow them to cool completely.
  9. Microwave milk chocolate chips in 30-second increments, stirring after each until smooth.
  10. If needed, add coconut oil or shortening to thin out the chocolate.
  11. Place chow mein noodles in a large bowl; pour melted chocolate over them.
  12. Gently toss until every noodle is fully coated.
  13. Scoop about 2 tablespoons of chocolate-coated noodles onto each cooled cookie base.
  14. Shape noodles into a circular nest with a hollow center for chocolate filling.
  15. Let nests sit at room temperature for about 15 minutes to firm up slightly.
  16. In a small bowl, microwave milk or dark chocolate chips with coconut oil or butter until smooth; stir well.
  17. Spoon melted chocolate into each nest's hollow center until halfway filled.
  18. Gently tap each cookie on the counter to smooth out the filling.
  19. Allow it to cool completely; refrigerate for faster setting if desired.
