  • 14 oz fire-roasted diced tomatoes

  • 5 oz fresh spinach
  • 1 yellow onion (diced)
  • 1.5 cups green lentils
  • 6 cups chicken broth
  • 1 tbsp olive oil
  • salt to taste
  • black pepper to taste
  • 1/2 tsp cumin
  • 2 celery ribs (diced)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, celery, and minced garlic; cook until softened (about 5 minutes).
