  • 8 oz medjool dates, chopped
  • 1 cup boiling water
  • 3/4 cup boiling milk
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 1/4 cups all-purpose flour
  • 1/2 cup Dutch processed cocoa powder
  • 1 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 8 tbsp unsalted butter for toffee sauce
  • 3/4 cup brown sugar for toffee sauce
  • 1 cup cream for toffee sauce
  • 1 cup milk for toffee sauce
  • 200g dark chocolate for toffee sauce
  • 1/2 tsp salt for toffee sauce

Instructions

  1. Soak chopped dates in boiling water for about 10 minutes.
  2. In a bowl, beat softened butter, brown sugar, and vanilla until fluffy. Add eggs one at a time.
  3. Mix flour, cocoa powder, baking powder, baking soda, and salt in another bowl. Gradually add to wet ingredients alternating with boiling milk.
  4. Fold in soaked dates and their liquid.
  5. Pour batter into a greased baking dish and bake at 350°F (175°C) for about 25 minutes.
  6. Meanwhile, prepare the toffee sauce by melting butter with brown sugar and stirring in cream and milk until smooth.
  7. Allow pudding to cool slightly before serving with warm toffee sauce drizzled generously on top.
