  • 1 lb boneless chicken thighs, chopped
  • 1 large onion, diced
  • 1 carrot, chopped
  • 4 small russet potatoes, peeled and quartered
  • 3 cups chicken stock
  • 3 tbsp gochujang (Korean chili paste)
  • 3 tbsp soy sauce
  • 1 tbsp vegetable oil

Instructions

  1. In a small bowl, mix gochujang, soy sauce, minced garlic, sugar, and sesame oil to create the sauce.
  2. Heat vegetable oil in a medium pot over medium heat. Sauté diced onions until translucent.
