  • 1 ½2 cups uncooked orzo
  • 1 red bell pepper, chopped
  • 1 English cucumber, chopped
  • ½ red onion, small diced
  • 6 oz. crumbled feta cheese
  • 23 garlic cloves, minced
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh basil, chopped
  • Juice and zest of 1 lemon
  • ½ cup extra virgin olive oil
  • 1 tablespoon honey
  • ½ teaspoon sea salt
  • ½ teaspoon cracked pepper

Instructions

  1. Cook the orzo in boiling water according to package instructions until al dente.
  2. While cooking, chop the vegetables: red bell pepper, cucumber, red onion, parsley, and basil.
  3. Drain the cooked orzo and rinse it under cold water to cool.
  4. In a large mixing bowl, combine the cooled orzo with the chopped vegetables, minced garlic, lemon juice and zest, olive oil, honey, salt, and pepper; toss well.
  5. Gently fold in the crumbled feta cheese without breaking it apart too much.
  6. Cover and chill until ready to serve. Toss again before serving and drizzle with additional olive oil if desired.
