  • 2 1/2 cups all-purpose flour
  • 1/2 cup white sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 ¼ cup milk
  • 1/2 cup melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup jam or preserves

Instructions

  1. Preheat your oven to 400°F and prepare a muffin tin with non-stick spray.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix milk, melted butter, egg, and vanilla until smooth.
  4. Combine wet ingredients into dry ingredients; stir until just mixed (lumps are fine).
  5. Fill each muffin cup one-third full with batter. Add about one teaspoon of jam atop the batter and cover with more batter until cups are nearly full.
  6. Bake for 20-25 minutes, checking doneness with a toothpick.
  7. Cool for one minute before transferring to a wire rack.
