  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped cherries (fresh or jarred)
  • 2 tablespoons cherry juice (optional)
  • 1/2 cup heavy cream
  • 4 ounces dark chocolate, chopped
  • 1 tablespoon butter

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a jelly roll pan with parchment paper.
  2. In a large bowl, beat eggs and sugar until fluffy; add vanilla.
  3. In another bowl, sift together flour, cocoa powder, baking powder, and salt. Gently fold dry ingredients into the egg mixture.
  4. Spread batter evenly in the prepared pan and smooth out the top. Bake for about 10 minutes until it springs back when touched.
  5. While still warm, turn the cake onto a kitchen towel dusted with powdered sugar and peel off the parchment paper. Roll up the cake with the towel inside tightly and let it cool completely.
  6. In a separate bowl, beat heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form. Fold in chopped cherries and cherry juice if using.
  7. Unroll the cooled cake carefully and spread the whipped cream filling evenly over it. Roll it back up without the towel and place it seam-side down on a serving platter.
  8. To prepare the ganache topping, heat heavy cream until just simmering, pour it over chopped chocolate and butter, and stir until smooth. Let cool slightly before drizzling over the rolled cake.
  9. Garnish with piped whipped cream, whole cherries, and chocolate curls before slicing and serving.
