  • 2 tablespoons butter
  • 3/4 lb top sirloin cubes
  • Salt and pepper to taste
  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion (chopped)
  • 2 medium carrots (peeled and chopped)
  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese (shredded)
  • 3 tablespoons chives

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a cast iron skillet, heat olive oil and butter over medium-high heat. Season beef with salt and pepper; brown on all sides (6-8 minutes).
  3. Add onions and carrots; cook for 4-5 minutes.
  4. Sprinkle flour over the mixture, stir, then add apple cider and beef broth; bring to a boil.
  5. Transfer to an oven-safe dish, cover with foil, and bake for 1 – 1½ hours until tender.
  6. Boil peeled potatoes until tender; drain and mash with milk, sour cream, cheddar cheese, and chives.
  7. Serve the stew over mashed potatoes.
