  • 3/4 cup granulated sugar
  • 1/4 cup extra virgin olive oil
  • 1/4 cup sour cream
  • 3/8 cup chopped fresh figs (about 2 figs)
  • 3/8 cup fig jam
  • 3/8 cup old-fashioned oats or chopped walnuts
  • 8 Tablespoons unsalted butter (room temperature)
  • 8 ounces cream cheese (room temperature)
  • pinch fine sea salt
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 3 1/3 cups confectioners' sugar
  • Ground cinnamon (for sprinkling on top)
  • Sliced fresh figs (for garnish)

Instructions

  1. Preheat your oven to 325°F and line a muffin pan with cupcake liners.
  2. In one bowl, whisk together flour, baking soda, cinnamon, ginger, cardamom, and salt. In another bowl, beat eggs and sugar until light. Mix in olive oil and sour cream.
  3. Gradually combine dry ingredients into the wet mixture until just mixed. Gently fold in chopped figs, fig jam, and oats or walnuts.
  4. Fill cupcake liners two-thirds full and bake for 20-25 minutes or until a toothpick inserted comes out clean.
  5. For frosting, beat room temperature butter and cream cheese until creamy. Add honey and confectioners' sugar gradually until smooth.
  6. Frost cooled cupcakes and garnish with sliced figs and a sprinkle of cinnamon.
