  • 2 medium-sized oranges
  • 200 grams granulated sugar
  • 200 grams almond meal
  • 100 grams finely ground pistachios
  • 6 large eggs
  • 1 tsp baking powder
  • A pinch of salt

Instructions

  1. Thoroughly wash the oranges and boil them in water for about 30 minutes until soft. Let them cool.
  2. Cut the cooled oranges in half, remove any seeds, and blend into a smooth puree using a food processor.
  3. In the processor, add sugar, almond meal, ground pistachios, baking powder, and salt. Blend until well combined.
  4. In a separate bowl, whisk eggs until frothy. Gradually mix in the orange-nut mixture to form a smooth batter.
  5. Preheat the oven to 180°C (350°F). Grease or line a 9-inch round cake pan with parchment paper.
  6. Pour the batter into the pan and bake for 45-50 minutes or until golden brown and a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
