  • 2 medium oranges (boiled and pureed)
  • 150 g almond meal
  • 100 g shelled pistachios (finely ground)
  • 6 large eggs
  • 200 g granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat oven to 170°C (340°F). Prepare a 23 cm (9 inch) springform pan by lining the base with parchment paper and greasing the sides.
  2. Boil the oranges in water for 60 minutes. Drain, cool, remove seeds, and puree until smooth.
  3. In a large bowl, whisk eggs and sugar until pale. Stir in orange puree until well combined.
  4. In another bowl, mix almond meal, ground pistachios, baking powder, and salt. Fold dry ingredients into the wet mixture gently until just combined.
  5. Pour batter into prepared pan, smooth top, and bake for 50-60 minutes or until a skewer comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
