  • 1 lb boneless, skinless chicken breasts
  • 2 cups instant rice (white or brown)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 envelope onion soup mix
  • Optional: frozen mixed vegetables
  • Optional: shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch casserole dish.
  2. In a large mixing bowl, combine cream of chicken soup, cream of mushroom soup, water (using the empty soup can), and uncooked instant rice. Mix well.
  3. Pour the mixture into the greased casserole dish and spread evenly.
  4. Add any optional ingredients like vegetables or cheese if desired.
  5. Place raw chicken breasts on top of the rice mixture and sprinkle with onion soup mix.
  6. Cover tightly with aluminum foil and bake for 60 minutes without lifting the foil.
  7. After an hour, check for doneness; chicken should be at an internal temperature of 165°F (75°C). Optionally broil for 3–5 minutes to achieve a golden top.
  8. Let rest for 5–10 minutes before serving.
