  • 2 tbsp olive oil
  • 2 cups beef stock
  • 1 tbsp tomato paste
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 cups mushrooms, sliced
  • 1 cup pearl onions, peeled
  • 2 carrots, sliced
  • 2 cups apple vinegar
  • 2 tbsp flour

  3. In the same pot, sauté onion, garlic, carrots, and pearl onions until softened. Add sliced mushrooms and continue to cook.
  4. Return beef to the pot; sprinkle flour over the mixture and stir to coat. Add tomato paste and mix well.
  5. Pour in apple vinegar and beef stock; bring to a simmer while scraping up browned bits from the pot bottom.
  6. Cover and reduce heat to low; let simmer for about 2 hours or until meat is tender.
