  • 2 lbs chicken thighs and legs
  • 1 tbsp olive oil
  • 4 shallots (diced) or 1 medium onion
  • 1 rib celery (diced)
  • 45 sprigs fresh thyme
  • 2 cloves garlic (minced)
  • 125g turkey bacon lardons (or chopped turkey bacon)
  • 2 tbsp apple juice
  • 2 tbsp flour
  • 85 ml chicken stock
  • 2 apples (peeled, cored, and cut into wedges)
  • 125ml heavy cream

Instructions

  1. Preheat your oven to 180C/350F. Pat dry the chicken pieces and season with salt.
  2. In a large casserole dish, heat the olive oil over medium-high heat. Brown the chicken until golden, then set aside.
  3. In the same pan, cook turkey bacon until crispy; remove excess fat.
  4. Sauté shallots and celery until softened; add garlic and cook briefly.
  5. Stir in apple juice, then sprinkle flour to form a paste. Gradually add chicken stock, stirring until thickened.
  6. Add apple juice and mix well before returning the chicken and turkey bacon to the dish.
  7. Cover and bake for 30 minutes; uncover and bake for another 30 minutes.
  8. Fry apple wedges in reserved fat until golden; stir cream into the casserole before adding fried apples.
