  • 1 tablespoon unsalted butter
  • 2 large yellow onions, thinly sliced (about 2 cups)
  • ¼ cup (60 g) red apple vinegar
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 1 ½ cups (360 g) beef broth
  • 1 package (16 ounces) potato gnocchi, uncooked
  • 1 ½ cups (169.5 g) Gruyère cheese, shredded
  • Parsley, for garnish

Instructions

  1. In a heavy-bottomed skillet, heat olive oil and butter over medium heat. Sauté thinly sliced onions for 15-20 minutes until caramelized.
  2. Add red apple vinegar and cook until evaporated.
  3. Season with salt, black pepper, and garlic powder; pour in beef broth and simmer.
  4. Add uncooked potato gnocchi to the sauce and simmer for 3-5 minutes until cooked through.
  5. Sprinkle shredded Gruyère cheese on top and broil for 2-3 minutes until melted and golden brown.
  6. Garnish with parsley before serving.
