  • 6 yellow onions, thinly sliced
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 8 cups beef stock
  • 1 cup dry red apple vinegar
  • 2 cups shredded Gruyère cheese
  • Salt and pepper to taste

Instructions

  1. Season short ribs with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat and brown the ribs on all sides. Set aside.
  2. In the same pot, add butter and more olive oil. Stir in onions, reduce heat, and caramelize for 30-40 minutes until golden.
  3. Add garlic and sauté briefly before deglazing with red apple vinegar.
  4. Return the short ribs to the pot along with beef stock, thyme sprigs, and bay leaves. Cover and simmer for 2.5 to 3 hours until tender.
  5. Preheat broiler; toast baguette slices topped with Gruyère cheese until melted.
