  • 60 ml milk
  • 120 ml water
  • 21 g active dry yeast
  • 50 g sugar
  • 550 g Manitoba flour (or bread flour)
  • 2 eggs
  • 1 egg yolk
  • 5 g salt
  • 70 g unsalted butter
  • 750 ml vegetable oil (for frying)
  • 350 g chocolate spread

Instructions

  1. In a bowl, combine lukewarm milk, water, yeast, and sugar; let sit for about 10 minutes until foamy.
  2. In a stand mixer, combine flour, eggs, egg yolk, salt, and the yeast mixture; knead until elastic (about 6-8 minutes). Add butter and knead for another 3-4 minutes.
  3. Cover and let rise at room temperature for about 1 hour; then refrigerate for an additional 30 minutes.
  4. Roll out the dough into a rectangle and cut it into triangles. Shape them into croissants and let them rise for another hour.
  5. Heat oil in a deep frying pan to between 170 – 180°C (340 – 355°F). Fry beignets in batches until golden brown.
  6. Dust with a sugar-cinnamon mixture while warm.
