  • 1 box of puff pastry dough (2 sheets), thawed
  • 3 tablespoons melted butter, for brushing
  • Sanding sugar
  • 1 8-ounce block of cream cheese
  • 1 tablespoon sour cream
  • 3 tablespoons granulated sugar
  • 2 teaspoons lime juice, freshly squeezed or bottled
  • Lime zest from one whole lime
  • 21/2 teaspoons vanilla extract
  • Fresh blueberries, rinsed and dried
  • Fresh strawberries, stems removed and cut in half
  • Optional garnish: additional lime zest

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare baking sheets with silicone mats or parchment paper.
  2. Unfold the thawed puff pastry sheets on a lightly floured board. Using a large 4.5-inch biscuit cutter, cut out 4 rounds of dough from each piece. Lightly score the rounds with a smaller biscuit cutter or drinking glass.
  3. In a mixing bowl, combine cream cheese, sour cream, granulated sugar, lime juice, lime zest, and vanilla extract; mix until smooth.
  4. Place two tablespoons of the cream cheese mixture in the center of each puff pastry circle and spread it out using the backside of a spoon while leaving a 1/4-inch rim around the edge.
  5. Arrange fresh blueberries on half of the rounds and artistically place halved strawberries on the remaining rounds.
  6. Bake for 15-16 minutes or until the edges of the puff pastry are lightly golden brown. Allow cooling before serving.
