  • 12 oz rigatoni pasta
  • 8 oz Velveeta cheese
  • 4 oz cream cheese
  • 3 cups whole milk
  • 4 tbsp butter
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 4 cloves garlic, minced
  • 1 cup all-purpose flour
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Cook rigatoni in a large pot of salted water until al dente. Drain and set aside.
  2. Toss chicken with olive oil, Cajun seasoning, garlic powder, and smoked paprika.
  3. In a skillet over medium-high heat, cook seasoned chicken until golden brown and cooked through; remove from skillet.
  4. In the same skillet, melt butter and sauté minced garlic. Whisk in flour to create a roux. Gradually add milk, stirring until slightly thickened.
  5. Lower heat; add Velveeta and cream cheese until melted. Stir in mozzarella and Parmesan until smooth.
  6. Return chicken and rigatoni to the skillet; toss to coat in the creamy sauce.
