  • 1 salmon fillet
  • 1 medium potato, peeled and cubed
  • 1 cup baby carrots
  • 1 cup broccoli florets
  • 1 tsp olive oil or butter
  • 1 garlic clove, smashed
  • Salt, pepper, paprika, and Italian seasoning (to taste)

Instructions

  1. Cook the Potatoes: Boil cubed potatoes in salted water for about 10 minutes until tender. Drain and sauté in olive oil or butter until golden brown; season with salt and pepper.
  2. Sauté the Salmon: Season the salmon fillet with salt, pepper, paprika, and Italian seasoning. In a hot skillet with olive oil, add smashed garlic. Cook salmon skin-side down for 4-5 minutes; flip and cook for another 2-3 minutes until done.
  3. Steam Vegetables: Steam baby carrots and broccoli florets for 5-7 minutes until tender. Toss with olive oil, salt, and optional chili flakes.
  4. Assemble & Serve: Plate the crispy potatoes next to the salmon and add the colorful veggies on the side.
