  • 12 ounces linguine or fettuccine
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 5 ounces fresh spinach
  • 1/2 cup finely chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1 cup reserved pasta cooking water

Instructions

  1. Cook the pasta according to package directions in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
  2. Season the shrimp with salt and pepper. In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Cook shrimp for 1-2 minutes per side until pink. Remove from skillet.
  3. In the same skillet, reduce heat to medium and add remaining olive oil, garlic, and red pepper flakes. Sauté for about a minute.
  4. Add spinach to the skillet and cook until wilted (2-3 minutes).
  5. Toss cooked linguine into the skillet with spinach and garlic, adding reserved pasta water gradually until desired creaminess is achieved.
  6. Return shrimp to the pan along with parsley and Parmesan cheese, mixing well.
  7. Adjust seasoning if necessary and serve hot.
