  • 8 oz elbow macaroni (uncooked)
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • ½ cup grated Parmesan
  • 6 slices mozzarella cheese (cut into ghost shapes)
  • Black sesame seeds or peppercorns (for eyes)
  • Olive oil or butter (for greasing)

Instructions

  1. Cook the elbow macaroni in salted water until just tender. Drain and set aside.
  2. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute to form a roux.
  3. Gradually whisk in milk and cook for 3–4 minutes until thickened.
  4. Remove from heat and stir in cheddar and Parmesan until melted. Season with salt and pepper.
  5. Combine the cooked pasta with the cheese sauce, mixing well to coat.
  6. Grease a baking dish, spread the mac and cheese evenly, then top with mozzarella ghost slices.
  7. Add black sesame seeds or peppercorns as eyes on the ghosts.
  8. Bake at 375°F for 20–25 minutes or until bubbly and golden brown.
